3 Quick & Healthy Plant-Based Dessert Recipes

Can’t put down that post-dinner chocolate, cake or ice cream? If you need your daily dose of sweetness, there are plenty of healthy, plant-based dessert swaps you can make for a guilt-free treat! 

I’m a pancake lover through and through, but I love getting creative with plant-based powerhouse ingredients like Medjool dates, cacao powder, oats, and peanut butter.

Try these mouthwatering plant-based dessert recipes for an easy and guilt-free treat at any time of the day! 

Date-Night Rice Cakes

  • peanut butter powder (the one I use here) OR regular peanut butter
  • cacao nibs
  • pitted Medjool dates
  • rice cakes

Then simply load up those rice cakes!

Cacao Chip Balls

  • 1 cup cacao or carob powder
  • 1 tsp vanilla flavoring
  • 1/2 cup peanut butter powder
  • 1 tsp salt
  • 2 cups oats
  • 5-6 pitted Medjool dates
  • 1/3 cup coconut nectar

Pulse until well blended (if mixture needs moisture add more nectar), and then add 1/2 cup cacao nibs and 1/2 cup crushed hazelnuts.

Continue pulsing until all is mixed in. Place mixture into a container with parchment paper. Let mixture stand in the fridge for 30 minutes, then form/roll into 1 inch balls. Coat in shredded coconut flakes (and/or more hazelnut pieces) and place balls back into container and chill in fridge for another hour before serving.

Motivated Morning

Peanut Butter Vanilla Oat Cream

  • 1 frozen banana
  • 1 scoop peanut powder
  • 1 pinch sea salt
  • ½ cup oats
  • 1 cup ice
  • 1 tsp vanilla (opt)
  • 1 tsp maple syrup
  • ½ cup non-dairy milk

Blend until creamy!

Top with coconut, cacao nibs, fresh berries….whatever you want!
